*~*Poulet Roti au Beurre (French Roast Chicken)*~*

*Ingredients*
1 medium chicken
1 carrot, chopped
1 stick of celery, chopped
1 onion , sliced
1/2 teaspoon lemon juice
6 tablespoons butter
1/2 teaspoons tarragon
salt and pepper

*Directions*
Cream 2 tablespoons of the butter , then beat it till it becomes fluffy.. Mix in the lemon juice, the tarragon, and a lil salt and pepper.. Spread this seasoned butter inside the chicken, the close the opening with thread or skewers.. Melt the remaining 4 tablespoons of butter, then brush half of this over the chicken..Put the chicken on its side in a roasting pan and poast it in the oven(230'c/450'F)for ten mintutes..Then turn the chicken on its other sidebrush again with the butter and roast for another 10 mintutes..Now reduce the heat to 350'F ..Put the chicken on its back and brush with butter again with the remaining butter..Put the carrots, celery, and onio in the roasting pan..Roast ,basting occassionally, until the chicken is tender(1 hour together)..Remove the chicken and put it on the carving board..Strain the jucies and serve them separately..
