*~*Colombo Creole (Creole Chicken Curry)*~*

*Ingredients*

1 medium chicken, cut into serving pieces

1 1/2 pound pork diced

1 egg-plant (aubergine) chopped

6 carrots, sliced

6 potatoes, peeled, diced

2 tomatoes, chopped

2 onions, chopped

2 cups water

1/2 cup olive oil

2 cloves garlic, crushed

1 teaspoons ground ginger

1 teaspoon ground turmeric

1 teaspoon ground cumin

1 teaspoon ground cardamom

1/2 teaspoon thyme

1/4 teaspoon dried ground chilli peppers

2 teaspoons salt

1/2 teaspoons pepper

*Directions*

Saute the onions in the oil in a large pan for 10 mintutes, then remove and keep them aside.. Brown the chicken and the pork in the pan, then return the onions.. Cover and cook over low heat for 25 mintues, stirring occasionally.. Add the rest of the ingredients....Mix well then cover over low heat until chicken is tender (approximately 45 mintutes)

Serves : 6
